Our Innovation series is a single origin coffee subscription that brings those coffees to you. Each one demonstrates new thinking in coffee production and processing.

Why innovation matters

How a coffee is processed after picking has a huge effect on how it tastes. Changes to fermentation, drying or the variety itself can unlock flavours that traditional methods don't reach.

But unusual isn't enough on its own. Every Innovation coffee has to deliver a clear improvement in flavour or experience. We choose these coffees because the new approach makes them better, not simply because they're different.

What we look for

Innovation coffees offer something genuinely different, whether through processing, fermentation, variety or production technique. Examples might include:

• Experimental fermentations: controlled approaches to fermentation that shape flavour in new ways
• Innovative drying methods: new ways of drying coffee that improve quality and consistency
• Novel varieties or production techniques: fresh approaches at the farm that change what's possible in the cup

What you'll receive

Every month, our Head of Coffee chooses a new Innovation coffee. We roast it fresh in London and send you a 250g or 1kg bag, with notes on how it was produced and what that technique brings to the cup.

What is coffee processing? Processing is everything that happens between picking the coffee cherry and exporting the green bean, including fermentation and drying. It has a major influence on flavour.

Are experimental coffees always better? Not automatically, which is why we're selective. Every Innovation coffee is chosen because its approach clearly improves flavour or experience.
