This month, our spotlight shines on Patricia Coelho, our latest Brazilian single-origin coffee offering. Boasting tasting notes of milk chocolate, raspberries, and cream, this coffee's unique fermentation process made it a must-purchase for us.

Patricia owns and operates Fazenda Santo Antonio, a high-altitude farm in the Mogiana region of São Paulo state, Brazil. This is our fifth consecutive harvest purchased from her, marking a vital long-term relationship.
We initially found Patricia during an initiative to source coffee from smaller Brazilian farmers who lacked access to the speciality coffee market. Since then, our commitment has grown, and we now import two containers (38,400 kg) annually.
The process for this lot: After harvest, the Mundo Novo cherries underwent an intense 96-hour anaerobic fermentation: they are placed in plastic drums filled with one-third water and hermetically sealed. The slightly macerated cherries are then spread on an asphalt patio to dry without washing, a process that preserves the fermentation's unique characteristics. Drying lasts about 18 days, with minimal turning and taller layering to achieve ideal moisture content.

Our Head of Coffee visited Patricia’s farm in 2024. Beyond her coffee, her personal story is an inspiration. After safely having a brain tumour removed, Patricia gained a renewed perspective, leading her to pursue her passion for cultivating specialty coffee.
Our collaboration with Patricia directly aligns with one of our core sourcing principles: Female Economic Empowerment. We are committed to ensuring female farmers receive the full financial benefit of their work. For us, good coffee is about both taste and ethical production.
