ABOUT

The coffee cherries are selectively picked by hand, only the ripest are chosen. They are then floated in water tanks to remove any low-density cherries that are likely to be defective. After sorting, the whole cherries are fermented in sacks for 48 hours before going to raised drying beds for 20-25 days and are turned constantly. Once the desired moisture content is reached, the dried cherry is milled to remove the green coffee, and is then prepared for export.

Planadas has become an important agricultural hub for coffee production as it is one of the top coffee producing regions in Colombia. The municipality was established in 1932 by the Spanish Jesuit priest Fermin Larrazabal, who guided a group of people from Huila and Antioquia to establish a settlement in a plateau near the river Atá.

This region has suffered heavily from the internal conflict in Colombia involving guerilla groups. Despite this, farmers have been able to persist and with resilience are able to keep producing high quality coffee.

Due to the stability brought from the peace agreement in 2016, this became an inflection point where coffee production was able to flourish.

Espresso - A slightly higher than 1:2 ratio will highlight the berry notes of this coffee whilst bringing out suttle liqurice flovour in the profile.
Aeropress- To bring out the fresh mint notes of this coffee, use slightly hotter water (95C). Using the inverted method, tip your coffee into the brewer, start the timer and, in a single pour, add the water. At 1:30 give it a stir. Put a filter paper in the holder, rinse and attach to the top. At 2:00 flip the Aeropress onto brewing vessel and push plunger slowly until 2:30. Enjoy the brew!

This is a versatile coffee which also works great as a pour over. we recommend a 55g/L coffee-to-water ratio with a brew time of 3-4 mins when brewing as V60.

ETHICAL COFFEE SOURCING

Just like our approach to roasting and training, we source coffee in such a way that prioritises empowering people who are disadvantaged or disenfranchised.

Every sourcing decision is made intentionally in order to maximise the impact for the producers.
We focus these decisions around 3 main principles:

REHABILITATION

In line with our mission in the UK, we support the rehabilitation of coffee producers previously involved in conflict, crime or the drug trade. We’ve been working with a project in Colombia which supports farmers who were previously members of paramilitary groups, and want to move away from growing illegal plants for the drugs industry and instead produce coffee. This allows them to have a steady, sustainable income which provides for their family and creates stability within their community.

Sustainable Initiatives

Economic and environmental sustainability are important issues at every stage of the coffee supply chain.

We work with Caravela, who on top of paying farmers up front, have an on-the-ground team to work with farmers improving their farm yield and reduce carbon emissions.

We also work closely with Raw Material CIC, who reinvest all profits at origin.

Female Economic Empowerment

We support the promotion of female coffee producers to improve gender equality in the industry. In an industry where women do most of the labour but rarely hold positions of power, we want to help reset the balance. We’ve built a relationship with Patricia Coelho, a female producer in The Pinhal Region in Brazil, to create our house espresso blend, The Block. We now do a lot of business with Patrica, giving her the capital to invest in producing better and better coffee and thereby access the speciality market. 2023 marks our third year working with Patricia.
